Amazing Gluten free recipe December 2, 2009

It’s one of the hottest cooking trends in the US–Gluten Free Cooking.  Those who are cooking GF are doing so out of necessity, due to the fact that their bodies can no longer tolerate Gluten.  What is Gluten?  It’s the elastic, rubbery protein found in wheat, rye, barley and oats.  Unfortunately, Gluten is used in the manufacturing of most our cereals, cookies, breads, boxed, packaged and processed foods to create textures that are palatable to our taste buds. 

According to www.celiac.com , symptoms of Gluten intolerance or sensitivity include diarrhea, weight loss, mild weakness, bone pain and bloating.  According to Paul Ratte, Naturopathic Doctor, the best way to know if you’re ailments are caused by Gluten sensitivity is to remove all Gluten from your diet for a least a month.  Just how is one supposed to remove Gluten from their diet if it’s found in most foods?

RECIPE
Holiday Ham Glaze Recipe (Gluten-free)
Ingredients:
¼ cup brown sugar
1 cup of fruit juice of choice (apple, mango, orange or pineapple)
Pinch of ground cloves
1 tsp of dry mustard
 
To make:  Stir ¼ cup light brown sugar or agave nectar into 1 cup fruit juice of choice.  Add a pinch of ground cloves and 1 tsp of dry mustard.  Mix well. Pour over ham. Bake ham according to weight.
